Use up your Pumpkin flesh by making this delicious Pumpkin Soup to keep you warm during these cold months.
You will need;
A frying or saucepan
A hand blender/Food processor
- 2 Onions
- 1 Sweet Potato
- 1 Pumpkin
- Vegetable Stock Cube/Fresh Stock
Sweat the onions, garlic, sweet potato and pumpkin flesh in coconut oil for 10 minutes
Add the cinnamon, cumin, coriander and a pinch of chilli for a further 2 minutes.
Add 1litre of vegetable stock and simmer for 25 minutes.
Blitz contents, Sprinkle some toasted Pumpkin Seeds on the top and enjoy.
